Cookware Knives Cutting Ability Blade / Paper Bursting Strength Tester
The need for such a cutting performance test is internationally agreed:
• To compare objectively various knife blades and determine which one is superior to another.
• To monitor the consistency of quality of cutting performance against the norm of manufacturing to be sure that the knives are within the standard values agreed upon.
• To be used as a development tool to enable research into the optimum steel, heat treatment, surface coating, edge geometry and finishing operations to suit the application.
• The machine system answers the questions " How sharp is it?" and " How long will the sharpness last?"
Methodology:
The knife is fixed in the machine and the blade is mounted in a position with the edge vertical. The blade is moved back and forth whilst a pack of special testing paper is lowered onto the blade. The blade cuts through the paper and the sharpness is then measured.
Two measurements are produced:
1. Initial Cutting Performance (ICP)
This measurement is based on the first 3 strokes, which represents the cutting ability or the sharpness of the blade.
2. Total Card Cut (TCC)
This is measured by conducting over 60 strokes, which represents the life of the blade.
These two measurements are produced and recorded by a microcomputer for each of the knives tested.
